Herring Like You Have Never Known It!
On June 17, The Roger Smith Hotel will open its new penthouse rooftop suites to the public, with a Herring Festival from 6-9 pm. This kicks off a summer-long herring fest at the hotel at Lily’s Restaurant and bar, with specials available daily.
Russ & Daughters will provide a variety of delights to celebrate Swedish Mid-Summer in traditional style: with herring, aquavit, cold beer and music al fresco. Admission to the public is priced at $30 per person. Tickets are available at the door, or by using the contact information below to purchase in advance.
The New Catch Holland Herring – “Holland Nieuwe” – will be introduced for the season, along with Scandinavian style herrings of all kinds: Herring with Mustard and Dill, Curried Herring, Gubbora, Warm Jansson’s Temptation. Dutch herring will be consumed straight from the barrel just as it is done in Holland, and Iceland. Guests will dine on an additional smorgasbord of treats such as crispbread, fine cheeses, and potato and beet salads. An array of specialty infused aquavits such as elderberry, lingonberry and ginger, will accompany the feast.
The Roger Smith Hotel will be serving these herrings all summer as specials at Lily’s Restaurant and at the adjoining bar. Restaurant Director Ulrika Bengtsson created several of the pickled herring recipes that Russ & Daughters uses. These will be highlighted and served on an a la carte menu, such as:
Swedish Herring Plate $12
Traditional Dutch herring with Iceberg Lettuce and Drawn Butter $12
Dutch Herring with Egg, Onion and Brown Butter $12
The New York Times has called Russ & Daughters “the city’s herring-to-go headquarters,” and has praised Bengtsson, the former executive chef for the Swedish General Consul General in New York and chef/owner of Ulrika’s, for her contributions to Swedish cooking and the use of herring in new cuisine.
