Part of the Italian Christmas tradition involves serving seven courses of fish for good fortune. Muller-Daka wanted to continue the theme of Sicilian essence in her food as with her wines by using reds from Planeta, Siciliy’s pre-eminent winemakers. However, because Sicily bears more red wines than whites, pairings for the fish-filled holiday menu posed a challenge. With no holiday miracle necessary, Muller-Daka unexpectedly and successfully pairs pine-nut sardine filet with Merlot, seafood and juniper risotto with Cerasuolo di Vittoria, or octopus carpaccio with rose, just to name a few.
